防癌 諾貝爾得主叮嚀吃牛排要全熟

(中央社記者邱俊欽桃園22日電）諾貝爾生理醫學獎得主楚爾．豪森今天在中原大學演講時談到，避免疾病感染，或是透過血液傳輸病毒「吃牛排一定要全熟」。

諾貝爾生理醫學獎得主楚爾．豪森（Harald zurHausen）今天應中原大學邀請，蒞臨學校演講。

他談到，喝牛奶、吃牛排，這些都是全球的人習以為常的飲食習慣，但可能潛藏致癌危險因子，研究發現，牛奶與牛肉的攝取，與乳癌和大腸癌的盛行率有密切相關。

楚爾．豪森表示，從牛奶及牛血清中可以找到20種造成乳癌、大腸癌及漸凍人症的危險因子，他指出，大腸癌顯然與牛肉攝取量有關，乳癌則與幼年時飲用牛奶有關。

另外，他也提到，從常吃牛肉的澳洲人，大腸癌罹患率是印度人9倍，常喝牛奶的美、加及澳洲人乳癌罹患率也比日本、印度等國高出數倍；大腸癌罹患率顯然與牛肉攝取量有關，乳癌與飲用牛奶有關。

楚爾．豪森建議吃牛排一定要全熟，避免疾病感染，或是透過血液傳輸病毒，至於市售的牛奶，因為經過滅菌與消毒，比較沒有問題。1040722
