防癌年菜！營養師力推好彩吉祥菇

【華人健康網記者駱慧雯／台北報導】許多人工作忙碌，三餐老是外食，就連過年闔家團圓也選擇外賣年菜或直接到餐廳吃年夜飯，癌症關懷基金會提醒，這些市售年菜普遍有高熱量和糖油鹽添加量多的問題，吃多了會導致肥胖且可能增加罹癌風險，建議民眾利用新鮮天然的防癌好食材，如花椰菜、香菇等，自己在家動手做年菜，料理簡單又吃得安心健康。

癌症關懷基金會董事長陳月卿表示，傳統年菜的熱量高，每人約攝取熱量3200大卡，連續9天年假吃下來，不但體重飆高且傷身又傷神。由於現代人的食物陷阱有四多：多精緻食物、多脂肪、多糖、多外食，若能減少外食、少買些外賣年菜，選對當季盛產的食材，自己動作做部分年菜，適度控制攝取量，也能健康過好年，再怎麼吃也不怕發胖。

遠離肥胖、慢性病和癌症的威脅，平日飲食可參考美國癌症研究所（AICR）所提供的防癌食物清單，優先攝取十字花科蔬菜、深綠色蔬菜、菇類、番茄、全穀類、堅果類和豆類等天然食物。至於如何將這些防癌食材變身為美味年菜，癌症關懷基金會營養師黃書宜示範4道健康年菜的作法，以供參考。

【好彩吉祥菇】（6人份）

●

材料：

1.

中型白蘿蔔半條、杏鮑菇2根。

2.

蛋5顆、紅黃甜椒各1/4顆。

3.

海鹽少許、昆布醬油少許、蓮藕粉少許。

●

作法：

1.

白蘿蔔洗淨削皮，切1公分厚的片狀。

2.

杏鮑菇洗淨，切薄片。

3.

花椰菜洗淨切小朵，加鹽燙熟備用。

4.

將白蘿蔔與杏鮑菇加水與昆布醬油蓋過食材，入電鍋滷半小時撈起，平鋪於大碗邊緣。

5.

彩椒切小丁備用，蛋打散加少許海鹽調味，起油鍋，將彩椒炒蛋至8分熟，倒入作法3的大碗中心，用湯匙壓緊，入電鍋蒸5分鐘，倒扣於圓盤，花椰菜擺放於周圍，最後用蓮藕粉勾芡淋上即可。

【好運連年】（6人份）

●

材料：

1.

黑米1/4杯+白糯米1/4杯。

2.

燕麥粒1/4杯+白糯米1/4杯、紅麴1大匙。

3.

瘦絞肉200公克、乾香菇2朵、荸薺4粒、青蔥2根、薑末少許、海鹽少許、胡椒粉少許。

作法：

1.

先將材料1的米洗淨，浸泡3小時後瀝乾備用。

2.

將材料2的米洗淨，加紅麴浸泡3小時後瀝乾備用。

3.

將材料3洗淨切碎，適度調味，捏成圓球狀，均勻裹上材料1與2的米，放入電鍋，外鍋放1米杯的水，待電鍋跳起，再燜10分鐘即可盛盤。

【椰香紅豆糕】（8人份）

●

材料：蜜紅豆300克、燕麥片120克（亦可用燕麥粒）、蓮藕粉80克、鮮奶500c.c.、水300c.c.、椰子粉適量。

●

做法：

1.

將燕麥片、蓮藕粉、鮮奶、水，一起放入調理機攪打3分鐘，倒入電鍋內鍋，再加入蜜紅豆混合均勻，外鍋放2杯水蒸熟後放涼。

2.

倒扣在圓盤上，撒上椰子粉即可上桌。

【白花椰地瓜濃湯】（6人份）

●

材料：白花椰菜200克、地瓜300克、洋蔥1/4顆、起司片1片、腰果2大匙、海鹽1小匙、咖哩粉1小匙、黑胡椒粉少許、老薑1片。

●

做法：

1.

白花椰切小朵、洋蔥切片，將兩樣食材燙熟備用。

2.

地瓜切小塊，入電鍋蒸熟備用。

3.

將全部材料放入調理機一起攪打1分半鐘即可完成。
